I always look for raw unfiltered honey when I need more for my pantry. We always have some on hand for various uses. With that being said, my local apiary loves me. From making crafts with beeswax to herbal products that use beeswax to even the simplest recipes like this with their honey, I'm keeping them in business! Using dandelions that would otherwise be mowed and tossed is an incredible way to utilize what you have on hand with almost no effort at all. Dandelions have so many lovely benefits and it's such a shame that we view them as pesky weeds! Reminder: only source dandelions from safe locations. You cannot use dandelions from places that have been sprayed with chemicals (such as your local park.) Use dandelions from your own yard that has not been treated and be sure you know if your neighbors have sprayed at all as the runoff can end up in your yard as well.

Dandelion (taraxacum officinale) benefits
- Dandelions (taraxacum officinale) are believed to support detoxing the liver.
- They are full of antioxidants.
- Dandelions have anti-inflammatory properties.
- They are rich in Vitamin C.
- This flower is also great for easing eczema symptoms.
What kind of flowers should I add to my honey?
You can use fresh or dried dandelions for this recipe! If you are using fresh, be sure they are clean and fully dry before use. Gently washing them with water and patting them with a towel should do the trick.
Check out your local farmer's markets and local food stores. If you don't have any luck there, finding local raw honey is easier than ever thanks to the internet! Sources like Facebook and local harvest are a wealth of info. Or simply Google, "local honey near me" to see what comes up!
What is raw unfiltered honey?
Raw unfiltered honey is honey that comes straight from the honeycombs without any processing or pasteurizing.
Infused honey is so easy. You can infuse dandelions in honey by simply giving it time! It's truly no fuss. Covering the petals in honey and shaking the jar 1-2x a week for at least one week results in a lovely infused honey!
Ways to use dandelion honey
- Add it to tea - This is perfect for your morning cup of tea. It is a great natural sweetener and makes herbal teas much more palatable!
- On toast - After you butter your toast, top it off with a bit of this honey. It is so sweet and delicious!
- Ice cream - Use this on some homemade ice cream for a fresh summer flavor.
- Charcuterie board - Add this in a small bowl to your charcuterie board layout to WOW your guests.
- On a cracker - Crackers are a quick and easy snack, spread a little dandelion infused honey on top to make it special.
Raw honey is often used to soothe sore throats and coughs, but it has so many other properties you should know about! It is antimicrobial, antibacterial, antifungal, and full of vitamins and minerals.
What you need
- Honey.
- Dandelions (taraxacum officinale) either fresh from a safe location that was not sprayed with chemicals OR dried.
- Glass jar with lid.
- Spoon or knife or chopstick.
- Label (sticker or scrap of paper.)
How to make dandelion infused honey
- Pick the petals off of your dandelions and place them in your jar. (The green parts will make it bitter!)
2. Pour honey over your dandelion petals. Be sure to fully cover them! If you are filling the whole jar, leave about a half-inch of space at the top.
3. Use your spoon, knife, or chopstick to gently push the petals into the honey. You want to make sure everything is covered completely and that there aren't any air pockets.
4. Cover your jar with a lid and label it with the contents and date. Give it a gentle shake once or twice a week. Enjoy after one week!
