Pineapple pico de gallo is a simple and delicious recipe you absolutely HAVE to try this summer! Prepare the ingredients and mix it all up, it's that quick and easy! This is a life-saving last-minute recipe for just about any gathering, a yummy snack option, or perfect to use as a topping on the next taco night.

This pineapple pico de gallo recipe only takes a few minutes to put together. Sure, it can be served any time of year but I think it's perfect for sitting outside in the summer! Fresh, fruity, and a little bit spicy if you add in a diced jalapeño. You are gonna love it!

Every time I make this, I buy an extra pineapple to make some pineapple habanero salsa too! That way there's another salsa option available for the next round of company (or just for us!) Want to change it up? Try mango pico de gallo, too!

    What you need

    • Pineapple - The star of the show! Tropical, juicy, and so so fresh. You're going to love it!
    • Roma tomatoes - Delicious and pairs beautifully with every other ingredient used in this recipe.
    • Red bell pepper - I chose a red bell pepper for the color and flavor, but of course, feel free to choose any color you'd like!
    • Red onion - I chose to use a red onion for its beautiful color and flavor. Feel free to swap out with a yellow onion if that's what you have on hand.
    • Fresh chopped cilantro - Fresh and aromatic, this is an essential flavor in countless salsa recipes.
    • Garlic - Grated-up garlic mixes in beautifully and deliciously.
    • Salt - I chose to use fine-ground Himalayan pink salt but you can substitute in fine-ground sea salt if you prefer.
    • Limes - Lime juice is a MUST for this pico de gallo!
    • Jalapeño - Optional if you want to add a bit of spice to the mix!

    Why you'll love this recipe!

    • Delicious - Using pineapple makes this recipe so tropical, fruity, and fresh! It is such a unique variation of pico de gallo that is sure to be a hit.
    • Quick - There is no cooking or oven roasting required for this recipe! Prepare your ingredients as described and mix them all up. It's so easy! This is a great last-minute recipe for just about any event.
    • Multipurpose - Serve pineapple pico de gallo alongside chips as a dip or with tacos as a topping option! You can use this as the centerpiece on a Mexican-themed charcuterie board in place of a store bought salsa!
What's the difference between mild salsa and pico de gallo?

Consistency plays a big role in this difference! A mild salsa will be a bit more liquidy, like a puree. It can be a little chunky or smoother depending! It is also made (typically) from cooked or roasted ingredients. Pico de gallo is chunky because it is made from fresh ingredients that are NOT cooked or roasted!

    Ingredients

    • 1 cup diced pineapple
    • 1 cup diced Roma tomatoes
    • ½ cup diced red bell pepper
    • ½ cup diced red onion
    • ¼ cup fresh chopped cilantro
    • 2 garlic cloves (grated)
    • ½ teaspoon salt
    • Juice of 2 limes
    • Optional: 1 diced jalapeño
diced pineapple, a red onion, red bell pepper, grated garlic, jalapeno, fresh cilantro, roma tomatoes, salt, and a lime on a table

    Pineapple Pico de Gallo Recipe

    1. Dice your pineapple, Roma tomatoes, red bell pepper, and red onion (optional: also a jalapeño.) Chop your fresh cilantro and grate your garlic. Add to a large mixing bowl.
    2. Add your salt.
    3. Juice 2 limes (see notes for a helpful tip!) and pour over all ingredients in the bowl.
    4. Mix everything well with a wooden spoon or rubber scraper.

    5. Serve with chips and enjoy!

    Notes

    • To get the most juice possible out of your limes, roll them with the palm of your hand across a table or countertop. Cut in half across the middle and juice!
    • You can substitute in a yellow onion if that's what you have on hand! I like to use a purple onion for the flavor and color.
    • You can use any color or bell pepper you’d like, I used red!
