Vanilla sugar is a delicious addition to your baked goods and hot beverages! That added touch of vanilla is such a treat and it is so simple to make on your own with just 2 ingredients.
While vanilla sugar is more commonly used in Europe, those of us in the United States and elsewhere who take inspiration from European bakers love it as well! It can be found at some specialty stores and online but I prefer to make my own.
Just like when I make lavender sugar, I can't help but feel so inspired to bake my heart out. What is vanilla sugar made of?
- Sugar - While I use raw unbleached cane sugar, you can also use conventional white sugar if that is what you prefer.
- Vanilla Bean - You will use all parts of the vanilla bean in this recipe!

Vanilla sugar uses
- Tea or coffee - Sweeten that morning cup of hot tea or coffee while adding in some vanilla flavor at the same time!
- Baked goods - It is a 1:1 swap with regular sugar in your baking recipe! Use this in a sugar cookie recipe for extra vanilla goodness.
- Ice cream - Use this in your homemade ice cream recipes!
- Topping - Sprinkle some on top of your cupcakes, muffins, and cookies for added sweetness and flavor!
- Gifts - Add a lovely little jar of sugar to a gift basket for the baker in your life or bring it along as part of a hostess gift.
Absolutely! It is a 1:1 swap with regular sugar and adds extra vanilla flavor. Give it a try!

Ingredients and Materials
- 2 cups raw cane sugar (or white sugar)
- 1 vanilla bean
- Food processor
- Airtight jar

Vanilla Sugar Recipe
- Measure and pour half of your sugar into the food processor.

2. Carefully cut your vanilla bean lengthwise and scrape out the seeds. Set aside and save the pod for later. Add the seeds to your sugar.

3. Pulse until combined with no clumps but don't overwork it!
4. Add the remaining sugar and pulse again until combined. (Yet again, don't overprocess it.)
5. Fill your airtight jar halfway with vanilla sugar then add in the empty bean pod (cut to size if needed) and then cover with the remaining sugar.

6. Use right away or wait 1-2 weeks for more flavor infusion. Store in a labeled airtight container and enjoy for 6-12 months!

Notes
- Store in a labeled jar with an airtight lid in a cool dark place for 6-12 months.
- Shake before each use to break up any clumps that may form.
- Don't over-process your sugar.
