Mint infused honey is a great recipe to have on hand when your plants go wild! Chances are, if you planted mint in the ground without knowing any better, it's all over! There's typically more around than you can think to use.
Mint honey is simple to prepare with just two ingredients and a bit of patience. It takes 3-4 weeks to infuse but don't worry, it requires little effort during that time! Now and then you'll flip the jar or open it to stir it around with a clean butter knife to mix it around and keep all the mint fully submerged. Store it next to your lavender infused honey, rose honey, and dandelion honey when it's in season!

What is mint infused honey?
Mint infused honey is just what it sounds like! You take mint leaves, dried or fresh, and cover them entirely in honey. Strain off the leaves in 3-4 weeks before storing in an air tight jar for up to one year.

Fresh or dry herbs?
You can use either fresh or dry herbs for your mint honey! The biggest concern with infused honey is moisture content.
Dry mint | No worry about excess moisture. Can be done any time of year with herbs preserved from your own garden. Easily sourced online any time of year. |
Fresh mint | You can use what's grown in your own herb garden or a fresh pack from the grocery store. Wash and pat dry before laying out on a clean towel or drying rack overnight to help ensure there is no excess moisture. |
If using fresh mint leaves, ensure that they have NOT been treated with any chemicals or pesticides. Make sure they are properly washed and fully dried off before using. Forage or harvest responsibly.
Mint leaves can be sourced fresh at your local farmers market or grocery store. You can also purchase them dried online on Amazon or Mountain Rose Herbs!

Shelf life
Mint infused honey can be kept with an air tight seal in a cool dark place for up to one year! Be sure to label your jar with the contents and date before storing.
What you need
- Honey
- Whole mint leaves (dried or fresh)
- 2 glass jars with lids
- Butter knife
- Small mesh strainer
- Optional: plate or saucer
How to make Mint Infused Honey
- Fill your jar ¼ - ½ full with dried or fresh mint leaves. (See notes if using fresh herbs!)
2. Cover with honey. Once the jar is almost full, use a butter knife to poke around and ensure everything is fully covered with honey and there are no air pockets.
3. Place the lid on the jar. Flip it upside down on a saucer or plate and allow it to all settle to the bottom. Once that happens, flip it back over right side up. Leave on the saucer or plate through this process to catch any leaking honey.
4. Allow the mint honey to infuse for 3-4 weeks. Occasionally flip the jar over on the saucer or plate to mix it up and remove the lid now and then to stir it.
5. After 3-4 weeks, take another glass jar and a small mesh strainer. Strain off your mint infused honey and discard the used herbs. Label appropriately!
